wineries...our off-site tasting room is over 500 miles away from the main
winery.  Rancho Mirage is located just 20 minutes drive from Desert Hot Springs,
California. The Tulip Hill Winery tasting room is located in the heart
of Rancho Mirage, in an outdoor entertainment center, The
River.
The tasting room offers wine tasting daily of their award winning
wines, complimentary olive oil tasting, unique gourmet foods,
custom gift baskets, wine accessories, unique stemware, wine filled

Chef Michael's Recipe for January SHELLFISH CAKES
1 lb Spiny Lobster 1 lb Rock Shrimp 1 lb Crabmeat 4 oz scallions 8 oz celery 4 oz chives 4 oz parsley 2 oz thyme 6 oz Dijon mustard 12 oz mayonnaise or vegenaise (grapeseed mayo) 1-1/2 cups breadcrumbs (crusts removed) 6 eggs (whipped) juice of 3 lemons
salt and pepper to taste
cayenne to taste
METHOD
Toss shrimp in olive oil, salt & pepper & roast at 350 degrees for 3 minutes, then cool. Saute celery until tender (no colour), cool.Mix celery and seafood, scallions, mustard, herbs and mayonnaise together.
Then add eggs, lemon juice and seasoning.
Fold in breadcrumbs, check seasoning, mold into shape and set in cooler.
Pan fry in a little oil and clarified butter until golden brown and finish in the oven at 375 - 400 degrees for approx. 5 – 7 minutes. Serve with remoulade or cream sauce.
You may need to add more breadcrumbs to bind the cakes. You do not want them too wet or dry, but just enough to absorb the moisture. You can increase or decrease ingredients to your taste. Serve with a glass of chilled champage or a crisp Viogner. Enjoy!
